Soul food cooking should be a personal journey, and you should feel free, just like my enslaved forefathers, to explore and put your own personal touch to the dishes. Remember, you can always add more spices and flavour to your dishes but, very difficult to take away, so go easy at first with the salt, pepper, Cajun spices and chili’s. Add more if you need to, add additional flavours if you think the dish can take it, but most of all enjoy what you cook, and make each dish your own and enjoy your journey into Soul In A Bowl.

I suggest experimenting with the spices and quantities. If you know you like it hot , then add more chili, If you know you should be cutting down on salt, then eliminate it from the list, remembering that if you are using my Cajun spice recipe there is salt all ready in the mix. When ever I use a cook book, I always try and interpret it to my taste and I want you to do the same. Don’t be afraid to experiment by taking away or adding to the recipe. Try and discover your personal soul.
